My file size is very large for my game (I tried to convert to html) and it turns out that the game has still kept images even those that I have deleted. For some reason if I have previously selected an image but then I remove it from the game, it still is held in there somewhere. Is there a way of deleting images for good.

They will still be in the game folder, and Quest just grabs all files of certain types when it publishes your game. Just delete (or move) them from that folder.
